This is the easiest recipe I think I have EVER made. It alsways turns out really good.
1 small can BBQ pork
1 small can BBQ beef
1 can white chicken
1 can cream corn
1 can whole kernel corn
1 - 28 oz can crushed tomatoes
Mix all ingredients in crock pot, add hot sauce to taste. Cook on high for 2 hours, simmer on low another 2 hours.

Mimi's Raisin Nut Bread
If you like Mimi's Restaurant, you will love this knock off recipe for their delicious raisin nut bread! I have made it many times and it always turns out perfectly. I also have used mini bundt pans and muffin tins and given them as gifts. Everyone will love it!
1 1/2 cups flour
1 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. salt
1 cup vege oil
1 1/2 cups brown sugar
3 eggs
1/2 cup chopped walnuts
1/2 cup crushed pineapple
1/2 cup raisins
1 cup shredded carrots
Combine flour, baking soda, baking powder, cinnamon and salt. In a separate bowl mix oil, sugar, and eggs, when combined add dry ingredients. Stir in walnuts, pineapple, raisins and carrots. Pour in a loaf pan and bake at 350 degrees for 30-40 minutes, until browned.

Broccoli Cornbread
I have made this recipe many times and it is always delicious! It is great with a salad for a light meal even. I have added and altered it on occasion with, sausage and cheese and things but these basic ingredients are best. It is also great if you are serving dinner and have a vegetarian guest. Enjoy!
10oz pkg. frozen, chopped broccoli

1 stick butter, softened
12 oz. cottage cheese
1 tsp. salt
1 small onion, chopped
1 box Jiffy corn muffin mix
Thaw and drain broccoli, squeeze out extra water. Mix all ingredients together, stirring Jiffy mix in last. Pour in square casserole dish and bake at 400 degrees for 35 minuets until golden around edges.

I just had to share this picture I found of this bouquet. I think it is so beautiful, I would love to find a way to use this idea without having to get married again! Maybe an idea for something in my home, on my mantel ... any suggestions?

Cheap Kids Snack
Crackers can be very expensive and buying prepackaged snacks for the kids even more so. This recipe is from Aarons grandmother and it is delicious the kids really like it.
16 oz. pkg. ranch dressing mix
1 cup salad oil
1/2 tsp. dill weed
1/2 tsp. garlic salt
22 oz. bag oyster crackers
In bowl, mix all ingredients together and let stand 2-3 hours, stir now and then. Put in zip bags to store.

Sausage and Potato Fritata
My brother in law is from Spain and makes this wonderful egg and potato "tortija" so I found this recipe that mimmics it and the family really liked it. It would be good for breakfast too.
1/2 cup olive oil
3 medium potatoes, peeled, cut and cubed (about 2 cups)
1 small onion, diced
1 lb. sausage
8 large eggs
salt and pepper to taste
Preheat oven to 350 degrees. In skillet warm olive oil over medium-low heat. Add potatoes in a single layer and cook, turning once,until just tender and lightly browned, 10 minutes. Transfer potatoes to a plate with a slotted spoot. Pour off all but 1 Tb of oil, reserving 2 tsp., and add onion and sausage to pan. Raise heat to medium-high and cook, breaking apart sausage with spoon, until onion is translucent and sausage is cooked through. Transfer to plate with potatoes. Pour reserved 2 tsp. oil back into skillet and swirl to coat. Whisk eggs with salt and pepper until well combined. Stir in potato mixture and pour back into skillet. Reduce heat to medium low and cook until egg begins to set but top remains soft. Transfer pan to oven and cook until top of frittata is set, 5-8 minutes. Remove from oven and let stand 5 minutes, cut ans serve warm or room temperature.
Italian Dressing Mix
I found the recipe for the Italian Dressing mix used in recipes and to make dressings. Jack loves italian dressing and I have found alot of recipes that use this mix so I mix up a double batch and keep it in my cabinet for whenever I need it.

Easy Chocolate Truffles
OK So I have made these truffles twice in three weeks. And yes I do share them with the kids, but I single handedly have consumed my weight in these deliciously easy little bites. It is like they are so small, you just pop them in your mouth and get a spectacular chocolate fix. And unfortunately a true chocoholic doesn't stop until they get sick! So in the spirit of true friendship I am sharing this recipe with you!
1 pkg softened cream cheese
1 pkg Oreos (if you buy the big box at Costco like I do use 2 sleeves)
1 bag chocolate chips
Crush the Oreos very finely in food processor. In bowl mix crushed Oreos with softened cream cheese until well combined. Melt the chocolate chips (I sometimes add a tsp. of vege oil to make it shiney and keep the chocolate from turning white). Scoop the mixture and form into small balls (I used a small icecream type scooper) chill in the fridge for about 30 minutes, once chilled dip ball into melted chocolate let set. ENJOY!
